Alain LE-BAIL is professor at ONIRIS Vet Agro Bio in the Food Engineering/Food Sciences Campus. His research takes place in the MAPS² group (Matrices, Product-Process, Structure-Sensorial) within UMR GEPEA (Process Engineering applied to Food science and Environment) affiliated to the National Scientific Council for Research (CNRS 6144). The research themes concern the impact of processing on food structure and food functionality with emphasis on phase change, physics of interfaces under external fields (electric field, microwave, ultrasounds) and interaction between gases during food preparation. The applications concern baking, refrigeration and 3D printing mainly. He is currently deputy coordinator of the EU-PRIMA-project “Flat Bread Mine”(2020-2025). Pr Le Bail has supervised +40 PhD, published +220 journal papers/24 book chapters/11 patents. 66 Invited lectures. H-Index 50. He is Editor of Innovative Food Science and Emerging Technology (Elsevier) and involved in several Editorial boards (Food Chemistry Advances/Applied Food Research/Journal of Food Engineering-Elsevier & Food And Bioprocess Technology-Springer.
